When I think about the first lifestyleweek as a becoming lifestyle professional, the first thing that pops up in my head is the Fieldtrip we had in Leiden. This fieldtrip was about ‘food innovations and durability’. There was told a lot of new information about different trends in food in former times, but also in the present. Besides, innovations about consumption was a point of attention.

We visited restaurant ‘De Waag’, a historical building with a new touch. The company called Debuut wanted to renovate the old building and wanted to start a restaurant.  The building was empty for a long time, so the company made it a place for the typical inhabitant of Leiden. This was symbolic for the city Leiden, but also the proud and the history was very important. For that reason, the building is treated with much love and respect. And you can see that clearly! That’s why the concept for this project was called celebrate the building.

‘Suzy’s herbs’ and the hand-written text about the diversity of beers characterizes an authentic style.

As you can see, the details were important to notice for the visitors: there’s a big collection of weighing machines (which is related to the old dutch word waag), and the interior has got the setting of a living room. Also durability was an important factor, that’s why you can see a lot of green plants and herbs. Debuut chose for classic and relatively easy dishes, so that everybody can find something he or she likes. Besides, the prices differ, so everybody feels welcome to De Waag. Due to this, the chance to make this concept attainable is getting bigger and bigger.
